Make the Waffles
- Preheat oven to 190º F.

- While the batter is sitting, preheat the waffle iron.
- Depending on the size of your waffle iron, pour ½ to 1 cup of the batter into the preheated iron.
- Bake until no steam is escaping the waffle maker, about 5 minutes.
- Place the finished waffle into the preheated oven.
- Repeat with remaining batter.
Make the Oyster Mushroom Chicken
- Fill a large pot with at least 2″ of oil. Heat to 375º F.
- In a small bowl, mix together the salt, paprika, oregano, basil, onion powder, garlic powder, crushed red pepper flakes, and black pepper.
- In a medium size bowl, mix all of the marinade ingredients plus 1 tsp. of the seasoning mix.
- Add oyster mushrooms, and let sit for 5 minutes.
- In a pie pan or a deep baking dish, mix together the flour, bread crumbs, and the remaining seasoning.
- Dip each mushroom piece into breading, being sure to coat all sides. Place on a clean or parchment paper lined baking sheet. Continue with remaining mushrooms.
- Let breaded mushroom sit for five minutes.
- Once the oil is heated, add several mushrooms. Cook until golden, about 2-4 minutes. Remove from hot oil, and place on a paper towel lined plate or baking sheet. Repeat with remaining mushrooms.
- Remove waffles from oven. Top with vegan butter, maple syrup, and the fried mushrooms.
