Oyster Mushroom Chicken and Waffles

Another craving fully satisfied. A fluffy, airy, golden waffle with a crisp little crust meets its perfect match in our oyster mushroom fried chicken. Enjoy a great, comfort food indulgence– all animal-free. Take this one to a whole other level with a drizzle of Harry’s Hot Honey.

Ingredients

For the Oyster Mushroom Chicken

6 oz. oyster mushrooms, cleaned and separated
Oil, for deep frying
Mushroom marinade
1 cup unsweetened soy milk
1 tbsp. lemon juice
1 tbsp. hot sauce (such as Tabasco)

Mushroom Breading

¼ cup flower
½ cup plain bread crumbs
1 tsp. sea salt
2 tsp. paprika
1 tsp. oregano
1 tsp. onion powder
½ tsp. garlic powder
½ tsp. crushed red pepper flakes
½ tsp. black pepper

For the Waffles

1½ cups plant-based milk
2 tsp. apple cider vinegar
2 cups cake flour
½ tsp. salt
1 tbsp. brown sugar
¼ cup vegan butter
1 tsp. vanilla
1 tbsp. baking powder
1 tsp. lemon juice

Directions

Make the Waffles

  1. Preheat oven to 190º F.
  2. Combine all of the waffle ingredients into a large bowl. Stir until combined. The batter will be a little lumpy, but don’t over stir. Set aside, and let sit for 5 minutes.
  3. While the batter is sitting, preheat the waffle iron.
  4. Depending on the size of your waffle iron, pour ½ to 1 cup of the batter into the preheated iron.
  5. Bake until no steam is escaping the waffle maker, about 5 minutes.
  6. Place the finished waffle into the preheated oven.
  7. Repeat with remaining batter.

Make the Oyster Mushroom Chicken

  1. Fill a large pot with at least 2″ of oil. Heat to 375º F.
  2. In a small bowl, mix together the salt, paprika, oregano, basil, onion powder, garlic powder, crushed red pepper flakes, and black pepper.
  3. In a medium size bowl, mix all of the marinade ingredients plus 1 tsp. of the seasoning mix.
  4. Add oyster mushrooms, and let sit for 5 minutes.
  5. In a pie pan or a deep baking dish, mix together the flour, bread crumbs, and the remaining seasoning.
  6. Dip each mushroom piece into breading, being sure to coat all sides. Place on a clean or parchment paper lined baking sheet. Continue with remaining mushrooms.
  7. Let breaded mushroom sit for five minutes.
  8. Once the oil is heated, add several mushrooms. Cook until golden, about 2-4 minutes. Remove from hot oil, and place on a paper towel lined plate or baking sheet. Repeat with remaining mushrooms.
  9. Remove waffles from oven. Top with vegan butter, maple syrup, and the fried mushrooms.
