This easy little mix takes your rice to the next level with all the traditional flavor and none of the fish. We love it with vegan sushi or poke, but go nuts. Hit dinner with a vegan Umami Bomb.

Ingredients

½ cup white sesame seeds 
2–3 plain or seasoned nori sheets
½ tsp. salt, more to taste
½ tsp. sugar (optional, but good)
2 tsp. shiitake or mushroom powder 
1 tbsp. kelp flakes
1 tbsp. black sesame seeds
½ tsp. wasabi powder
¼ tsp. red chili pepper flakes
1 tbsp. shallots, fried

Instructions

  1. In a spice grinder, pulse white sesame seeds 1 or 2 times so that the seeds are partially ground, leaving some whole, taking care to grind quickly.
  2. Heat a cast iron or sauté pan over medium low heat.
  3. Place seeds in pan, stirring every minute or so until they become fragrant and lightly toasted, about 7-8 minutes.
  4. Stack, fold, and cut nori into small strips then chop into small pieces– or you can crumble with your hands. 
  5. Add all ingredients in a mixing bowl, and stir until well combined.
