A beautiful and surprising garnish or side with plenty of crunch. Makes a great appetizer on its own, or elevates a taco in a fresh new way. It’s also an interesting alternative to coleslaw. This one is a summer staple at Mad Hare Vegan’s table (even the breakfast table).

Ingredients

2 cups rainbow cauliflower, cut into small florets
½ cup red onion, thinly sliced
1 jalapeno, thinly sliced
1 cup tomatoes, chopped
1 bunch cilantro, chopped
½ cup fresh lime juice
Salt, to taste
Crushed red chili flakes, to taste (optional for a spicy version)

Instructions

  1. In a medium bowl, add all ingredients and stir well.
  2. Cover bowl and refrigerate for at least 2 hours, or overnight for best flavor.

Serves three to four.
