Crispy fried zucchini-feta fritters. Golden brown on the outside, gooey-delicious on the inside, with a little squeeze of lemon. Pair it with our tangy vegan feta dip. Mouth watering yet?

Ingredients

2 medium zucchini, shredded
½ cup red onion, finely chopped
¼ cup vegan feta
2 tbsp. garlic aioli
1 tsp. fresh mint, finely chopped
1 tsp. fresh oregano, finely chopped
½ tsp. salt
½ tsp. pepper
½ tsp. marjoram
7 tbsp. flour
¼ cup vegetable oil

Lemon wedge (optional)

Instructions

  1. Add zucchini, onion, feta, aioli and herbs into a large bowl.
  2. Stir until all ingredients are well incorporated.
  3. Add in flour and mix well again.
  4. Form into patties and set aside on a parchment or wax paper lined plate.
  5. Heat oil in a large frying pan over medium high heat.
  6. Place the fritters in to the hot oil, and fry until golden brown on both sides (about 2-4 minutes per side).
  7. For an extra tangy bite, give the fritters a quick spritz of lemon juice.
