Crispy fried zucchini-feta fritters. Golden brown on the outside, gooey-delicious on the inside, with a little squeeze of lemon. Pair it with our tangy vegan feta dip. Mouth watering yet?
Ingredients
2 medium zucchini, shredded
½ cup red onion, finely chopped
¼ cup vegan feta
2 tbsp. garlic aioli
1 tsp. fresh mint, finely chopped
1 tsp. fresh oregano, finely chopped
½ tsp. salt
½ tsp. pepper
½ tsp. marjoram
7 tbsp. flour
¼ cup vegetable oil
Lemon wedge (optional)
Instructions
- Add zucchini, onion, feta, aioli and herbs into a large bowl.
- Stir until all ingredients are well incorporated.
- Add in flour and mix well again.
- Form into patties and set aside on a parchment or wax paper lined plate.
- Heat oil in a large frying pan over medium high heat.
- Place the fritters in to the hot oil, and fry until golden brown on both sides (about 2-4 minutes per side).
- For an extra tangy bite, give the fritters a quick spritz of lemon juice.
